Olive oil and vinegar

We stock a selection of good quality olive oils, which are generally from Greece and Sicily.

The olive oils we sell and use in our recipes, are extra virgin and cold pressed. This means they are produced from the first pressing of the olives, with an acidity level of less than 1% and are extracted by mechanical pressing, without applied heat.

The lower the acidity, the better the quality of the oil and cold pressing ensures the important flavours and vitamins remain unchanged.

Extra virgin olive oil is the best quality juice of olives, the fruit of the olives tree with the water removed.

Greek extra virgin olive oil: we particularly like oil pressed from Koroneiki olives grown in the Kolymvari region of western Crete. It has a deep green colour, a full fruity aroma and a characteristic sweet, subtle flavour. It is suitable for use in low temperature cooking, dressing salads and making mayonnaise. Available in 500ml bottles and three litre cans.

Hellenic Gold Greek extra virgin olive oil from the Southern part of the Peloponnese: produced on a small scale by skilled farmers and cold pressed by traditional millstones, the oil has a delicate fruity taste. Available in 5 litre cans.

Donna Carolina extra virgin olive oil from Sicily: an intensely fruity flavoured oil with a peppery edge. It is ideal for dipping with warm bread and can be used in place of butter if kept in the fridge. Available in 5 litre cans.

Biolea Single Estate stone milled and cold pressed, organic extra virgin olive oil: Biolea is a family owned company specialising in the artisan production of organic olive oil using millstones and presses. Oil produced in this way retains the maximum nutritional benefits and is distinguished by its mild, sweet taste. Biolea is an artisanal olive oil, the exclusive product of a family owned olive grove in Kolympari, Chiania, Crete. Available in 250ml and 500ml bottles.

Balsamic vinegar: Fruity Aceto Balsamico di Modena, ideal for use with olive oil in vinaigrettes, for dipping with olive oil, or for deglazing your roasting pan. Available in 500ml bottles.

Use olive oil to give extra crispness and flavour, along with a little rosemary or Provençal herbs and garlic, when roasting meat or vegetables. When mixed with herbs or spices, it makes a great alternative to salt in cooking. It can be used for dipping with bread, or instead of butter if it is kept in the fridge, where it becomes solid and spreadable.

Our oils are most suited to dressing raw dishes and salads, or on freshly cooked pasta and in oil based sauces. The smoking point of unfiltered oil is quite low, so it is best to avoid using it for high temperature cooking. Cooking with unfiltered oils can lead to the food burning before it is cooked properly and at smoking point any oil produces chemicals, which can be harmful to our health.

Olive oil is adversely affected by heat, light and air and should be kept in a cool dark place to preserve the quality. Once opened the flavour will gradually deteriorate, so ideally use it within a few weeks of opening.
